Tasty Spaghetti Bolognese | Vegan

In this post, I’m sharing another recipe with you, yay! This time it’s a super tasty vegan spaghetti bolognese recipe.

Every time I look for new vegan recipes all I find is healthy meals. But being vegan doesn’t necessarily mean only eating salad and smoothies. With this post, I want to show that it’s still possible to have hearty classics, just slightly adjusted.

 

Vegan Spaghetti Bolognese

Ingredients

  • 1 tbsp Olive Oil
  • 2 Onions
  • 3 Carrots
  • 3 Celery Sticks
  • 2 – 3 Garlic Cloves
  • 1 1/2 tbsp Rosemary (dried or fresh)
  • 200 g Soya Mince
  • 2 Cans of Chopped Tomatoes
  • 1 tbsp Basil (dried or fresh)
  • 1 tsp dried Oregano
  • 2 Bay Leaves (dried or fresh)
  • 2 1/2 tbsp Tomato Puree
  • 1 Vegetable Stock Cube
  • 1 tsp Chilli Powder (optional)
  • Salt and Pepper to taste

 

How to cook the Bolognese

First, heat up the olive oil in a big saucepan and start chopping up the onions. Once that’s done put them into the saucepan over a low heat, chop up the carrots and celery and add them to the pan. Peel and crush the garlic and cook it in with the other veggies.

If you’re using fresh herbs it’s now time to chop them up and add them as well. Otherwise put in the mince (I used Morrison’s own brand) and fry everything for another 5 minutes. If you’re using dried herbs add them now, then add the chopped tomatoes and the tomato puree. Last but not least, put in the vegetable stock cube and stir until it’s dissolved.

Now all you need to do is put a lid on the saucepan and let it simmer for 90 minutes. Well, you might want to stir occasionally so nothing sticks to the bottom. About 15 minutes before the sauce is ready, start boiling the pasta so everything is ready at the same time.

We had our Bolognese with some garlic baguette, I think it goes really well together! Just check the ingredients and make sure it doesn’t contain any dairy. We usually go for Tesco’s everyday value garlic baguette as it is ‘accidentally vegan’.

 

There we go, now it’s time to enjoy your vegan spaghetti bolognese!
